Fresh & Fruity Breakfast Smoothie

It’s officially Spring now right? I know it’s March, so we’ve technically cleared winter for a few weeks now, but with the daffodils popping up everywhere and slightly warmer weather recently (except some freakish snow in Dublin last weekend!) I’ve been keen to change up my breakfast game recently. I was also delighted to be part of the Plant Power Day by Alpro on the 7th of March this week, and shared a tasty Thai Green Curry on my Instagram – and now this fresh breakfast smoothie recipe too! You guys know I love my Overnight Oats – but sometimes you just gotta go with a change, and this smoothie fit the bill!

Recipe (Serves 2)

Ingredients

  • 1 mango, de-skinned and sliced into small chunks
  • 1 banana
  • 80g of oats
  • 300ml of coconut milk (I went for tropical vibes using Alpro Coconut Unsweetened, but you could use any milk!)
  • 100ml of water
  • 1/2 tsp ground ginger (it gives a great kick!)

Method 

  1. Super simple – add everything to your blender (I use my Nutribullet!), blitz, and serve!
